About Me

Hi, I’m Brenda! I’ve been a vegetarian for almost two years, and I live in Southern Pennsylvania with my husband, The Fisherman (Mac), and our Miniature Dachshund (Annabelle) who has deemed me her least favorite person in the house. 

I’ve always had an aversion to meat, so meatless meals aren’t new to our kitchen, but after watching one too many “cuddle-cow” videos, I made the decision to give up meat completely. Luckily, The Fisherman was on-board, and we’ve been a meat-free house ever since. 

I started this blog as a way to share my personal vegetarian journey, and that means you’ll find a lot of great food, but you’ll also learn more about me as I share new finds, product reviews, and new adventures where I have to be the “weird-girl” who doesn’t eat meat. 

I like to make filling and nutritious meals, but I hate spending hours in the kitchen—unless I can cook a huge bake that yields a lot of leftovers! That’s where the title of this blog came from! I usually start cooking on the stovetop, but the oven is definitely my BFF when dinner-time rolls around. The recipes I make are (mostly) easy, made with easy-to-find ingredients, and they are so good, our omnivore daughter never complains when she comes home from college! 

(BTW: The air fryer is quickly becoming my second BFF!)

On that note, unlike lots of other food blogs that only use fresh, whole-foods, I use a variety of foods to make my recipes, and that often (but not always) includes healthy, pre-packaged foods, including protein-packed, plant-based meat substitutes. If you only eat whole-foods, this might not be the blog for you, but you never know…sometimes a simple substitution can change a recipe from good to great!
